Cheesecake Stuffed Strawberries

Once again another Valentine day recipe, and this is such a romantic dessert it would be a shame to pass this one up! Cheesecake Stuffed Strawberries covered in chocolate, that just sounds like Valentine day in a bite doesn't it. The best thing about this besides, well everything, is that it only requires 5 items to make or actually less depending on what recipe you take!
Cheesecake Stuffed Strawberries:
1 pound large strawberries
8oz. block cream cheese – soft
3 – 4 tablespoons powdered sugar (depends on how sweet you want the filling)
1 teaspoon vanilla extract (or use almond, lemon, etc. )
Graham cracker crumbs
Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out inside with a knife to make a whole but don't go through them! Once the strawberries are cut out, set aside.
Combine cream cheese, powdered sugar and vanilla with a mixer.
Add cream cheese mix to frostine piping bag (or use a zip-lock bag and cut a whole) and fill strawberries.
Top the piped strawberries with crushed graham cracker crumbs and melted chocolate if you desire.
For an alternate version of the Cheesecake filling:
In the dairy aisle, next to the cream cheese usually, Philadelphia Cream Cheese has a cheesecake filling that would be easier to use for this. I think the pre-made filling is good too, and it saves money just buying this instead of the ingredients.
