Jerk Chicken Tacos

If you can't tell yet, I love Jerk Chicken! I went on a cruise and they had jerk chicken that made me addicted for life. Since I've been home I have made just about everything I could with jerk sauce or seasoning in it or on it. These tacos however are the best of both worlds because I love love love Mexican food.
Jerk Chicken Tacos:
- 4 boneless skinless chicken breast
- 1/4 cup Jerk marinade (where to get jerk marinade)
- 1 taco seasoning packet, any brand you'd like
- 1/4 tsp garlic powder
- Pepper and salt for seasoning
- 1 tblsp Jerk marinade
- Toppings: Pico de gallo, lettuce, cheese, sour cream, taco sauce, ect.
Directions:
- First, prep the chicken to be ready to bake. You can start pre heating your oven to 375
- Put some butter in your pan and the 1/4 cup of jerk marinade and put it in the oven while it pre heats
- Season the chicken with the salt and pepper and place the chicken the pan that was pre heating once the butter is melted. Bake for about 20 minutes or until the chicken is no longer pink.
- Once the chicken is baked take two forks and start shredding the chicken.
- In a skillet over medium heat melt some butter and add the 1/4 tblsp of jerk marinade, mix those together. Then add the newly shredded chicken into the butter jerk mix skillet.
- Cook that down for about 5 minutes then add the taco packet and water to the packets directions, it should be about 2/3 cup water depending on the brand you're using. Then mix in the 1/4 tsp of garlic powder and turn the heat up to medium high
- Keep moving the chicken around so it doesn't stick while cooking at this high heat. After about 3 minutes turn the heat down to low medium and keep cooking it until the mixture is no longer watery and the sauce is sticking to the chicken.
- Once the chicken is cooked you can start assembling your taco to your liking. I made some topping suggestions but you can add anything you'd like. I would heavily suggest tomatoes to cut the spice of the jerk chicken however.
