Roasted Ranch Breakfast Potatoes

I am a potato lover since birth! I love roasted potatoes too, and especially cheesy ones. This is a dish that can be either breakfast or dinner sides.

Roasted Ranch Breakfast Potatoes:

2 pounds russet potatoes (unpeeled, washed and cut into chunks) 1/2 cup prepared ranch dressing 1/2 cup shredded cheddar cheese, 1/4 cup to mix in and 1/4 cup for topping 4-5 slices crispy bacon, crumbled 2 green onions, chopped salt & pepper 1 tablespoon olive oil

Directions:

-Pre heat oven to 350 degrees

- In a large bowl, add ranch, cheese, bacon, potatoes and green onion. Sprinkle mixture with olive oil, and salt and pepper to taste. Toss to coat potatoes.

- Pour into a 9 x 13 baking dish and cover with foil.

- Bake for an hour. Half way through cooking, remove foil and stir gently then place foil over potatoes and continue cooking for another 30 minutes.

- When the hour is up, remove foil and stir again. Then sprinkle the cheese on top and raise the temperature to 400

- Continue to cook until potatoes are golden and the cheese is bubbly

You can serve this with sausages or bacon or even for a dinner side.
