Cinnamon Roll Pancakes

Since I am not much of a breakfast person and I have a super sweet tooth, I love sweet things for breakfast. These cinnamon roll pancakes are perfect for that mixture of sweet morning foods.

Cinnamon Roll Pancakes:

- Box pancake mix

Cinnamon Filling:

- 4 tablespoons unsalted butter, melted

- ¼ cup + 2 tablespoons packed light brown sugar

- ½ tablespoon ground cinnamon

Cream Cheese "frosting":

- I used regular frosting just warmed, but you can use any homemade icing recipe. Such as:

  • 4 tablespoons butter

  • 2-ounces cream cheese, softened

  • ¾ cup powdered sugar

  • ½ teaspoon vanilla extract

Directions:

- Make the cinnamon filling by combing all ingredients in a bowl and placing it into a plastic ziploc bag. Set aside

- Make pancakes as directed on the box, then on a heated skillet or pan place about 1/2 cup of pancake batter in the pan.

- Wait for the pancake to form little bubbles and cook a bit on the first side, then add the cut a tip off the cinnamon filling bag and squeeze in a swirling motion.

- Carefully flip the pancake and continue to cook for another 1 to 2 minutes or until golden.

- Make sure to keep the pan or skillet clean before adding new batter.
