Crispy Fried Pickles

Before living in the south I never heard of fried pickles! I was a picky eater as a kid and I didn't like pickles, let alone fried pickles. Now I love this things, and every time Zaxby would bring this back during the summer I had to have them. Now i have the recipe and can save money and drooling time looking at Zaxby's menu while waiting for my food!

Crispy Fried Pickles:

- 1/2 cup of buttermilk

- Jar of Dill pickles

- 1/2 cup of flour

- 1 1/2 cup of fine corn meal

- I tsp of seafood seasoning

- 1/4 tsp of cajun seasoning

- Oil for frying

Directions:

- In a shallow dish combine buttermilk, salt, and pepper

- Place pickles in the buttermilk mitxture and set aside

- Pour the flour, corn meal, cajun seasoning, and seafood seasoning into a resealable plastic bag, shake it to mix it up well

- Add a few pickles in at a time to the bag and shake to coat

- Heat oil in either a deep fryer or skillet

- Fry in small batches for 1 to 2 minutes, and drain the oil by placing them on a paper towel

- Serve with buttermilk ranch and you can add 1/2 teaspooncajun seasoning to the ranch for a kick!
