This is a nice meal to make for something quick but filling. I think when I was in school living on my own I ate a lot of snacks when I had a lot of stuff to do, and the snacks weren't exactly filling.

Baked Bbq Chicken Sandwhich:

  • Pre-cooked chicken, shredded or diced.

  • Barbecue sauce, I use Sweet Baby Rays

  • Shredded Colby Jack Cheese

  • Sandwich rolls or hot dog buns

Directions:

- Mix the barbecue sauce and shredded/diced chicken. You can add however much or little you want

- Fill the sandwich rolls with the chicken mixture, squirt on a bit more bbq sauce.

- Place sandwiches on a baking sheet.

- Sprinkle the shredded cheese over the sandwiches and bake at 425 degrees for about 8 to 10 minutes or until the cheese is melted and bead is toasty.

- If using leftover chicken, make sure to reheat it a bit in the microwave
