Strawberry Cheesecake Cupcakes

Yup you read the title right, cheesecake inside a strawberry cupcake! Now when I started college I had a cupcake and dessert catering company called Sweet Tease and this cupcake was a big sale for me and my mom. People at my job and at school were paying for these by the dozens literally!
Strawberry Cheesecake Cupcakes:
For the cupcake I used regular strawberry box mix, or Vanilla if you don't love strawberry (but who doesn't)
For the Filling:
1 package of cream cheese, softened
1/2 cup sour cream
1/4 cup milk
1/2 package instant vanilla pudding mix
1 cup Cool Whip, thawed
For the Frosting:
2 sticks butter, softened
3 packages of cream cheese
6 cups powdered sugar
Mix together butter & cream cheese on medium high speed until well blended and fluffy, maybe 1 to 2 minutes
Reduce speed to low and slowly blend in powdered sugar. When sugar is blended, increase speed to medium and beat for another 1-2 minutes until smooth.
To add strawberry flavor, you can add strawberry extract or leave it!
Directions:
- Make cupcakes to the box directions, once they cool take a chunk out the centers with a spoon or knife
- In a large bowl, beat the cream cheese until smooth Add the sour cream and mix well. In a small bowl, beat the milk and pudding mix on low for 2 minutes. Stir it into the cream cheese mixture. Mix in the whipped topping. Fill the hole in the cupcakes with the filling.
- Frost the cupcakes and refrigerate
For those chunks of cupcake taken out safe them and make strawberry cheesecake cake pops! For that just take the left over cake chunks and mix it with the homemade frosting, then cover it with melted chocolate of your choice!
