Bang, Bang Shrimp

So if you have read my blog before, you know I HATE seafood!! However every once in a while a seafood recipe catches my attention because my mom loves sea food. So I decided to not take away seafood recipes for people who really like them, just don't expect me to give my review of the recipe!
I think adding some spicy seafood to a bbq menu really mixes it up a bit. If everything on your menu is steak, burgers, and hot dogs, go ahead and throw an "odd" item in to wake up those taste buds!
1 pound raw shrimp
½ cup mayo
¼ cup Thai sweet chili sauce
4-8 drops Sriracha hot sauce
1 tbsp. peanut butter
1/8 tsp. garlic powder
¼ tsp salt
1/8 tsp black pepper
1 cup corn starch
2 eggs
6 tbsp. vegetable oil
In a large bowl toss shrimp with, salt, pepper, and garlic powder.
Place corn starch in a shallow dish, in another shallow dish lightly whisk the two eggs.
Dip each shrimp in corn starch, then dip in the egg wash.
When all the shrimp has been coated, heat 6-8 tbsp. of oil in a skillet. When the oil is hot, add the shrimp. You may want to do 2 or 3 batches so they have room to cook.
The shrimp cooks quickly, so cook each side for about 30 seconds to 1 minutes until each side is crispy.
In a bowl whisk together the Thai sauce, sriracha, mayo, and peanut butter. Mix together until smooth, then add the shrimp in.
