This makes a good side or appetizer for a summer bbq! Plus it won't keep you in the kitchen away from guest, it's one of those "dump" recipes where you dump all the items in a bowl, mix, and serve!
15 oz. black beans, drained
15 oz. can black eyed beans, drained
4 small tomatoes, diced
2 cups corn kernels
½ medium onion, chopped
¼ finely chopped green bell pepper
½ cup pickled jalapeno peppers, chopped
Salt to taste
1 cup Italian salad dressing
¾ cup chopped cilantro
3 tbsp. lime juice
Mix everything together. Let this cool in the refrigerator for 20 minutes, and serve with chips.
