I came across this corn craze last year and wanted to try some recipes, but that didn't happen. Fast forward to this year and grilled corn is still a popular grill side. There are so many different recipes for grilled corn, and they all look so good! This recipe is one of many grilled corn recipes, there are so many to try too. I think I'll be posting these all summer since I didn't get to try these last summer.
¼ cup mayo
¼ cup sour cream
½ cup feta cheese
½ tbsp. chili powder
1 tsp minced garlic
¼ cup finely chopped cilantro
4 ears of corn, shucked
1 lime, cut into wedges
Get the grill ready! While the coals heat, combine mayo, sour cream, cheese, chili powder, garlic, and cilantro in a large bowl.
Place corn on the grill, cook until charred in spots on every side, about 10 minutes.
Place the corn in the bowl with cheese mixture. Evenly coat the corn with mixture. Sprinkle with extra cheese and chili powder, and serve with lime wedges.
