Red Velvet Cake Parfaits

I love a good parfait, and this is a unique one. For some reason I feel like this is something more for the holidays or even Valentines Day, but hey it's red velvet! I like how this can be made a day ahead of time or the morning of a get together and still taste freshly made.

Cake:

1 box red velvet cake mix

3 eggs

1 cup water

1/3 cup vegetable oil

Filling:

1 package cream cheese

½ stick of butter

¾ cup half and half

2 cup powdered sugar

½ cup sour cream

¼ cup milk

½ tsp vanilla

Pre heat oven to 350 degrees. Spray a 9x13 baking pan with nonstick spray.

In a mixing bowl combine cake mix, eggs, water, and oil. Beat for 30 seconds on low, scrape down bowl, and beat for another 1-2 minutes. Pour into pan and bake for 22-25 minutes. Set cake aside to cool.

In a mixing bowl, beat the cream cheese, butter, and half and half. Mix until smooth, then gradually add the powdered sugar. Beat in the sour cream, milk, and vanilla. It should look like custard.

In a small glass or trifle stand, break cake into small pieces at the bottom, leaving room for the custard.

Repeat this layering and top with whipped topping.

This should make 12 small cup parfaits or 1 large parfait/trifle. Place in the refrigerator until ready to serve.
