In case you haven't noticed, I have been on a bit of a parfait kick lately! I just love how simply they are to make and still very delicious. I also like them as a party dessert for a few different reasons. The first reason, they can be served in individual cups or in a trifle stand for guest to serve themselves. Reason number 2, they are easy to make so you don't spend a lot of time away from your guest or even make them ahead of time. I reall just love the simplicity of parfaits too, they are very summery too.
1 can sweetened condensed milk
12 oz. cream cheese
1/3 cup key lime juice
3 drop green food coloring
2 cups graham cracker crumbs
½ cup butter, melted
1 cup heavy cream
2 tbsp. powdered sugar
2 tsp. vanilla
With a mixer, combine condensed milk, cream cheese, lime juice, and food coloring until smooth.
Place bowl in refrigerator.
In another bowl, combine crumbs and butter until combined well. Set aside.
In a third bowl, beat cream until it starts to thicken. Add powdered sugar and vanilla.
Continue to beat until it reaches desired thickness, refrigerate.
To assemble, alternate layers of lime filling and crumbs, top with whipped cream.
